**Evan** (1:36)
When I was in middle school, I was introduced to you for the first time from my dad, who was watching, I don't even remember what it was, but it was an episode you did on ramen.

**Dave Chang** (1:48)
Well, I feel old. Thank you.
It was probably Mind of a Chef.

**Evan** (1:54)
That sounds right.

**Dave Chang** (1:55)
Yep, that was a precursor to Lucky Peach, where Ying and I decided to take the word, the written word over the video format. Smart idea.

**Evan** (2:06)
And that was when I was first introduced to Sukumaj. And ever since then, it's been like one of my favorite dishes ever.

**Dave Chang** (2:13)
For those that don't know, Sukumaj is a dipping style noodle, a dipping your noodles into a broth.

**Evan** (2:21)
I don't get it too often. I think it's something I can only get every few years, and it's like a real treat for me.

**Dave Chang** (2:26)
Well, I'm going to do something that I wasn't planning on doing. I'm going to give you two dipping sauces so you can dip the noodles in.

**Evan** (2:31)
That's amazing. Thank you.

**Dave Chang** (2:33)

I'm your neighbor, actually. I work at 3sixteen, which is in the row. It's a menswear store.

**Dave Chang** (3:12)
What do you do at 3sixteen?

**Evan** (3:14)
Yeah, I just work on the floor. Are you familiar with the brand at all?

**Dave Chang** (3:18)
I'm not, tell us a little bit about it.

**Evan** (3:19)
So it's a menswear brand. Started in the early 2000s by Johan and Andrew.
They kind of pioneer Japanese denim in American fashion. They've been in the game since 2008, making Japanese denim. They've kind of developed their own fabric from Okayama, and then from there, they've kind of just mastered it.

**Dave Chang** (3:44)
For the audience, what is Japanese denim?

**Evan** (3:49)
Putting me on the spot.
Japanese denim, so I guess it's just denim from Japan, simply put. What makes it different is that it's probably made a lot better than it is here. What they do there is they have these looms called shuttle looms, which are the original way of making denim.

**Dave Chang** (4:12)
By the way, thank God you're actually coming with a real answer, because I was so worried that you're like, well, it's just called Japanese denim.

**Evan** (4:18)
Sorry, I know it started off a little hesitant, but...

**SPEAKER_2** (4:21)
You were feeling the same way, Ying.

**Evan** (4:25)
Yeah, so shuttle looms. And where was I? Yeah, it's just developed on shuttle looms. And what makes it a little different is, I think, just it's homage to the original way denim was made.
And that's just been the tradition ever since.
