LA Michelin Thoughts

Mad Food

July 1, 2026

A recapping of the recent awards, Max makes his own picks, and Mario Carbone has thoughts that may make sense in Los Angeles. Plus, a coastal pizza battle, sushi pricing, and lazy Susan love.
Speakers: Jordan Okun, Max Shapiro
**Jordan Okun** (0:03)
Mad Food, I'm Jordan, Max is here, and we have some recent feedback and questions from the questions from the audience that we must dive into, Max.

**Max Shapiro** (0:14)
I'm unaware of this feedback.

**Jordan Okun** (0:16)
Well, it comes to me. You get some feedback sometimes, and then you send it to me.

**Max Shapiro** (0:21)
Sometimes. Sometimes I don't even register it and I ignore it.

**Jordan Okun** (0:25)
You know, let's stop ignoring it.

**Max Shapiro** (0:28)
It'll be part of the show.

**Jordan Okun** (0:30)
Let's get people what they desire.

**Max Shapiro** (0:33)
Okay.

**Jordan Okun** (0:34)
Which is information.

**Max Shapiro** (0:35)
I actually got feedback the other day.

**Jordan Okun** (0:37)
What did you get?

**Max Shapiro** (0:38)
It was the the Hillstone PrimeBeef feedback.

**Jordan Okun** (0:43)
Okay. The person who wrote that in?

**Max Shapiro** (0:47)
I work for Allen Brothers. We sell them Prime.

**Jordan Okun** (0:50)
Yeah.

**Max Shapiro** (0:50)
Well, then why do some menus say Prime, and some just say steak and no distinction?

**Jordan Okun** (0:58)
So were they claiming that everything Hillstone is serving is Prime?

**Max Shapiro** (1:01)
That the claim is that everything is Prime, but then why do some menus say PrimeBeef and some just say nothing?

**Jordan Okun** (1:06)
I don't know, but I tend to believe them.

**Max Shapiro** (1:11)
Sure. I believe them now.

**Jordan Okun** (1:12)
I mean, they work for the distributor. And it's easy for us to assume that Hillstone is not serving choice.

**Max Shapiro** (1:21)
That's fine. I just, it's confusing when some menus say Prime and some don't say anything.

**Jordan Okun** (1:25)
All right. Well, the confusion is over. Yes. So nice not to be confused.

**Max Shapiro** (1:30)
Sure.

**Jordan Okun** (1:31)
Right? That land of confusion that was sung about.

**Max Shapiro** (1:34)
It's a vast land.

**Jordan Okun** (1:35)
Okay. Jorard, you're always talking Diet Coke, but never the glassware. What is the preferable cup? Okay.
Not a flute. Well, much like champagne, my bubbles should never be in a flute, Max. But even if it's a celebratory event, my preferable one is a wine glass, a white wine glass.

**Max Shapiro** (2:02)
Wow. You know, sometimes the luxury really does rear its head.

**Jordan Okun** (2:06)
Does it?

**Max Shapiro** (2:07)
Yeah.

**Jordan Okun** (2:08)
That's the best.

**Max Shapiro** (2:09)
You want a stemmed glass for your Diet Coke.

**Jordan Okun** (2:12)
You want a stemmed for it. And it doesn't need to be a big one. You know, I was out, I was at a kind of a steakhouse the other night, and it was like a mini one, but a nice stem.

**Max Shapiro** (2:23)
Okay. I mean, this is how I want my gin and tonics. I don't want them in a Collins glass. I want them in a wine glass.

**Jordan Okun** (2:31)
I'm all class, baby.

**Max Shapiro** (2:33)
Like in Hispania. Yeah.

**Jordan Okun** (2:36)
And you know, if I'm with like a group, I'm often with a group of drinkers and I'm not partaking.

**Max Shapiro** (2:42)
Are you often?

**Jordan Okun** (2:43)
Absolutely.
And it's kind of nice. You know, you feel part of the crew. Yeah. Well, we were at Johnny's house and he was cooking for us. Everyone was drinking wine and he had gotten me Diet Coke. So I put it right in one of his wine glasses. He loved it. So there you go.

**Max Shapiro** (3:02)
Wow.

**Jordan Okun** (3:03)
There's the answer, folks. See? Now they're informed.
Another question. Why are you always in Jersey, Jordan? And that pizza looks amazing. Can you definitely say that East Coast has better pizza than LA? Yes. Yes, of course. We've gone over this.
LA has great pizza, the Tri-State area better.

**Max Shapiro** (3:30)
Density of good pizza is much higher.

**Jordan Okun** (3:32)
Yeah, it's all over the place, and they've been cooking it, and it's a style that I like. Did you see that pizza that I was posting?

**Max Shapiro** (3:39)
Yeah.

**Jordan Okun** (3:39)
What do you think of a ranch drizzling on a pizza?

**Max Shapiro** (3:43)
You know, it's not something I gravitate towards, but I'll try it.

**Jordan Okun** (3:46)
Right. I went to Angeloni's in Codwell with the fam.
You know who lived in North Codwell, Max?

**Max Shapiro** (3:55)
Who's that?

**Jordan Okun** (3:56)
Tony Soprano. You know why I say lived, Max?

**Max Shapiro** (4:03)
He's deceased.

**Jordan Okun** (4:04)
Because he died in the finale. Everyone knows that. And anyone who doesn't believe that is an idiot.
He is dead. That pizza had, so they're known for their thinny thin. They have a few different styles of pizza.
