Okay, let's get started. Hi, Jeremy.
Welcome to Conan Needs A Fan. We have Conan and we have special guest, Taylor Tomlinson here.
Conan O'Brien (1:39)
Hi. Hey, how you doing, Jeremy?
Jeremy (1:41)
I'm good. How are you guys?
Conan O'Brien (1:43)
We're doing great.
And I have so many questions for you because the only thing I know about you, Jeremy, I know two things. I know three things. You're from Boston. You're now living in San Francisco. And it says here, you're a flavor scientist.
Jeremy (2:00)
All of those are true. I have my Red Sox mug that I'm drinking out of to prove I'm from Boston.
Conan O'Brien (2:06)
Very good.
Jeremy (2:06)
And yeah.
Taylor Tomlinson (2:07)
They don't just hand those out.
SPEAKER_2 (2:09)
Yeah.
Conan O'Brien (2:10)
They don't.
SPEAKER_2 (2:10)
You gotta earn them.
Conan O'Brien (2:11)
No, they do.
SPEAKER_2 (2:13)
They hand them out.
Jeremy (2:17)
Yeah. I'm a flavor scientist in San Francisco.
Conan O'Brien (2:20)
Okay. Now, there's so much to talk about here because I really don't know what a flavor scientist does. Taylor, I can't speak for you. Do you know what a flavor scientist does?
Taylor Tomlinson (2:32)
That's what I went to school for. So, yeah, I'm very familiar.
Conan O'Brien (2:37)
You know what? I did know that. I can't believe I forgot that.
Taylor Tomlinson (2:40)
No, I didn't know. I did not know the term flavor scientist. That's one of those jobs that I feel like when you get high and you're eating snacks, you go, whose job is this?
SPEAKER_5 (2:51)
How do I get that job? So I feel like I'm so excited to talk to someone who has that job.
Like, how did you get that job?
Conan O'Brien (3:01)
Yeah, Jeremy, what happened?
Jeremy (3:03)
Yeah, so I can kind of break it down for you guys.
I moved out to California in 2014 for my PhD in physical chemistry at Berkeley. And while I was at Berkeley, I was using a bunch of high-end analytical instrumentation to look at tailpipe emissions from cars and to look at emissions coming off of...
Conan O'Brien (3:26)
Was this a hobby or part of your work?
Jeremy (3:32)
It was part of my work. I wrote up a dissertation, I wrote up papers on this, and partway through, I kind of realized that the same technology that I was using is also used in perfumes, and fragrances, and flavor to identify. Those molecules are responsible for individual flavors and sensations. I've always loved cooking and mixology.
I make my own cocktail bitters and limoncello. I really wanted to do something where I could combine the science with my passion for food and baking.
Being a flavor scientist seems like that perfect opportunity.
Conan O'Brien (4:13)
All right, we have, I think, a photo of you doing your work. I think we're going to show her. There you are.
Jeremy (4:19)
Okay.
Conan O'Brien (4:20)
Boy, does that look... That's me.
SPEAKER_5 (4:22)
He goes, all right. So...
